You can use diced beef instead of lamb.

Lamb Muffin Pies

These pies are delicious and quick and easy to put on the table, particularly if you are using leftover roast lamb.

2 rashers bacon, diced

¼ cup gravy mix

1½ cups water

1 tablespoon Worcestershire sauce

2 cups cooked lamb, diced (we used leftover roast lamb)

6 sheets puff pastry

¾ cup grated cheese

1 egg, beaten

Preheat the oven to 180°C. Grease muffin tins (enough so you have 18 holes). Fry the bacon until just browned. Remove from the heat. Place the gravy mix in a saucepan and slowly add the water, whisking until smooth. Place over medium heat and continue to whisk until the gravy thickens. Stir in the Worcestershire sauce. Add the lamb and bacon and stir through. Use a cookie cutter or a large glass to cut 18 circles out of pastry, big enough to line the holes in your muffin tins. Press into the holes, then add 1 heaped tablespoon of the meat and gravy and top with 2 teaspoons of grated cheese. Cut out circles from the pastry the diameter of the holes. Place a pastry ‘lid’ on each pie and brush with egg. Bake for 25 minutes.
